The Correct Way to Eat Sushi

Sushi is one of the most representative aspects of Japanese culinary culture and is loved worldwide. However, the proper way to enjoy sushi deliciously and in accordance with Japanese tradition is not widely known. In this article, we'll explain how to eat sushi and the sequence in which to savor different toppings (neta).

 

 Start with White Fish

When you start eating sushi, it's common to begin with mild, lean white fish like "Hirame" (flounder) or "Tai" (sea bream). This helps to reset your palate and prepares you to fully appreciate the richer flavors that come next.

 

 Move on to Red Meat, and Then Fatty Fish

After the white fish, you proceed to red-fleshed fish (like tuna). Following that, you can indulge in fattier neta like salmon or fatty tuna (otoro).

 

 Finish with Sweet or Strongly Flavored Neta

It's recommended to eat sweet toppings like sea urchin (uni) or salmon roe (ikura), or neta accompanied by perilla leaves or wasabi, towards the end of your meal.

 

 Use Ginger as a Palate Cleanser

The pickled ginger that comes with sushi, called "gari", is eaten between neta to refresh the mouth. It helps accentuate the flavor of the following neta.

 

 Hold the Neta Portion

When eating sushi, you should hold the neta part using your thumb, index finger, and middle finger. This method prevents the neta and rice from separating and makes it easier to eat in one bite. Particularly since sushi rice is not packed too tightly, holding it this way ensures it doesn’t fall apart. Additionally, this allows the neta to touch your tongue first, letting you directly savor its flavor. Lightly dip the neta part in soy sauce before eating.

 

 What About Wasabi?

The unique spiciness and aroma of wasabi enhance the flavor of the fish. Especially when paired with fatty fish, the combination of its fat and wasabi's spiciness creates a sublime balance. Often, the right amount of wasabi is already applied to the sushi, so adding a large amount may overpower the flavor of the neta. You can add a bit more if needed, but do so sparingly.
